Meatballs and Courgetti

(courgette spaghetti)... served with cherry tomatoes, steamed asparagus, parmesan and basil

Meatballs: Beef and Lentil
lentils pair really well with beef because they take the flavours and have a similar kind of texture. Also an awesome idea to keep shopping costs down and fibre up! Danijela subs 500g of mince for 1 tin of brown lentils.

For the courgette spaghetti, a spiriliser is used

Beef Lentils
500g prime beef mince
1 x 390g tin of brown lentils
1/2 brown onion
2 cloves of garlic
1 free range egg
1/4 cup of parsley, finely chopped
1/2 tsp dried oregano
1/2 tsp salt

Preheat oven to 180C line a baking tray with baking paper. Or pan fry

1. Make the mix by draining lentils and rinse well
2. Peel and finely dice the onion and garlic
3. In a large bowl add egg and whisk. Add all other ingredients
4. Using hands evenly mix everything together until perfectly combined. Roll even tablespoons together into balls
5. Either bake for 15 minutes or oil up a fry pan and pan fry until cooked

Toss with courgette pasta, and voila!
