We can't look past a takeaway roast pumpkin soup in winter, especially with the butternut pumpkins in next week's Foodbox. And the humble egg sandwich can't be forgotten either. In a past life I was a sandwich recipe developer so there are a few tricks to the trade. We also have Weetbix bliss balls and courgette chocolate cake, which may be great to make with the kids. Simple fruit can't be overlooked either, and, as you can see from the video my daughter loves kiwifruit! If you have an avocado perhaps mash it up with some cocoa to replace a yoghurt in your lunch or slice up some courgettes and serve as raw slices with pesto and cottage cheese inside.
