Classic Potato Salad
A classic and here are my little secrets to success. The best secret for this salad is good potatoes and I love Jersey Benne potatoes. Then to keep it simple!
500g Jersey benne potatoes
3 Sprigs of spring onion (or red onion)
Dressing: 2 Tbsp mayonnaise, 2 Tbsp natural yoghurt mixed with 2 tsp Dijon mustard
Grilled bacon (optional)
1. Wash by lightly scrubbing potatoes (don’t peel them!)
2. Boil potatoes for 20-25 minutes until just done, you don’t want soft mushy potatoes
3. Chop spring onion and mix dressing ingredients together
4. Mix everything together and serve.
